Ingredients:
4 large potatoes (cubed)
1/2 c softened butter
1/2 c sour cream
1/2 c shredded extra sharp cheddar
1/4 c chopped chives
8 strips thick cooked crumbled bacon
Directions:
-Mix butter, sour cream, cheddar, and bacon.
-Fold mixture with cooked potatoes
-Salt and pepper to perfection and serve warm
-Reserve some bacon or cheese for topping.
